You could still use centered. That's what I do here:
  http://www.wischik.com/lu/Programmer/Webform

The main body of the text is centered and 24em wide. If any code snippets
are wide, yes even up to 500 characters, then they just spill over to the
right. It means that someone with a 1600 pixel wide screen or with dual
monitors can read the entire text without scrolling - just by maximising
their browser window. (I haven't yet bothered with IE compatability, which
is why my page gets pushed ot the left in IE, but I suspect it's fixable).
