How?  Use software like CVS, Subversion, Arch, etc.

The question you didn't ask was "Which" though I guess that can be
implied by "etc." :-)
The de facto king of version control in the open source universe is CVS,
so http://www.cvshome.org/ is probably a good place to start. CVS has a
few technical problems that have bothered people for a while so there
are several projects that are vying to replace it. Arch is GNU's entry
in to the fray, but CVS's heir apparent is Subversion
