you had to remove not only the From: adress but also any address 
cited in the mail body, because many people reply with "John Doe 
<john.doe at ...> wrote:" so your mail address is also in the body of 
replies.

You simply can't prevent them from getting your address used in 
mailing lists. They can also subscribe to lists, that's little work 
and yields good addresses.

I always tell people "don't use a valuable mail address in mailing 
lists, forums, newsgroups, blogs, for online orders etc". Give it 
only to trustul people.

Although it's a bit of work, I use different mail addresses for 
friends, work, online orders, mailing lists, newsgroups...

You can adjust filtering much better this way - for example give 
mails to your list address a better rating if they come from the  
list server, else apply strong filtering. And if spam gets too bad, 
you can still switch the address (I did it once).
