Good idea, Dave. I'm still learning about using wikis in education.
Supposedly, one of the big things is collaborative writing, and that's where
the simultaneous editing comes in.

I have a page for each class, and in that page are links for separate
personal pages for each student to play with. I also have one "serious"
page, with more to come. It's this latter category where I want the students
to all contribute. For example, we're studying the solar system in General
Science, and my eight students each have a different planet (I took Pluto).
Each is contributing stuff about their planet to the page "Points about
Planets."
